Healthy Picadillo Recipe

forkHere’s a simple and quick recipe for healthy picadillo (hash).

 

 

 

Ingredients:
1 cup Cauliflower
2 tablespoons red onion
1/2 cup spinach
2 slices chopped uncured nitrate free turkey bacon
1 egg or substitute 3 egg whites
1 tablespoon cilantro (or to taste)
Pinch of sea salt

Directions:
1. Steam cauliflower in microwave on high for 2 minutes, then sauté in frying pan adding additional ingredients
2. Either add egg whites to pan and sauté or top with poach egg
